Healthy Chicken Fajitas

Chicken fajitas might not be the first dish that comes to mind when you think of high-sodium foods. What really sneaks in the sodium is the seasoning blend typically used to flavor the chicken and veggies. 

But controlling your sodium intake is simple when you use low sodium herbs and spices. Instead of buying a store bought fajita spice mix, you just make your own at home. And chances are, you already have all the seasonings you need right in your pantry!

These low sodium chicken fajitas are just as tasty as ever. They’ve got all the flavors you love, but they’re easier on your heart!

Key Ingredients

  • Boneless, skinless chicken breasts: Lean chicken breasts are the go-to for these low sodium chicken fajitas!
  • Bell pepper: You’ll need both red and green bell peppers for this recipe.
  • Onion: Either red onion or yellow onion works just fine
  • Lime juice: Brings that vibrant citrus flavor to the dish.
  • Fajita seasoning: A combination of chili powder, ground cumin, smoked paprika, garlic powder, onion powder, and ground black pepper makes the chicken and veggies taste amazing.
  • Fresh cilantro (optional): The quintessential garnish for any Mexican inspired dish.
  • Flour or corn tortillas: Get a low sodium variety, if possible. You could even do lettuce wraps for a low carb option.

Preparation

In a bowl, combine chicken strips with the fajita seasoning, half of the lime juice, and 1 tablespoon of olive oil. Then toss to coat evenly.

Cooking

Next, heat a large skillet or cast-iron pan over medium-high heat. Add the sliced chicken and quickly brown on all sides, about 2-3 minutes

In the same skillet, add the remaining tablespoon of olive oil, bell peppers, and onion. Cook, stirring frequently, for about 3-4 minutes until the vegetables begin to soften.

Then return the browned chicken to the skillet. Continue cooking everything together for another 2-3 minutes, until the chicken is cooked through and the vegetables are tender-crisp.

Serving

Now it’s time to bring this all together! Drizzle the chicken and veggies with remaining lime juice and toss to combine. Garnish with fresh cilantro if desired.

Serve immediately with warmed tortillas and your favorite low sodium toppings like avocado slices, sour cream, or low sodium salsa. Enjoy!

What Goes Well with Low Sodium Chicken Fajitas?

Pair your low-sodium chicken fajitas with some classic Mexican-inspired sides like black beans, brown rice, or salsa. Or, skip the tortillas altogether by making chicken fajita bowls with quinoa or rice, roasted veggies, and avocado. This is an awesome way to load up the toppings without any mess!

Storage & Reheating

Store any leftover chicken fajita meat, vegetables, and toppings separately in airtight containers in the refrigerator for up to 3 days

To reheat your chicken fajitas, heat a non-stick skillet over medium heat and add in the desired amount of chicken and vegetables. Cook for about 5-10 minutes, stirring occasionally, until heated through. 

You can also reheat them in the microwave for about 2-3 minutes. Make sure to cover the container with a damp paper towel to prevent the chicken from drying out.

Ingredients
  

  • 1 pound boneless skinless chicken breasts, sliced into thin strips
  • 2 tablespoons olive oil divided
  • 1 large red bell pepper sliced
  • 1 large green bell pepper sliced
  • 1 medium onion sliced
  • Juice of 1 lime divided
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground black pepper
  • Fresh cilantro for garnish optional
  • Flour or corn tortillas low sodium variety, if possible

Instructions
 

  • Season chicken: In a bowl, combine chicken strips with chili powder, cumin, smoked paprika, garlic powder, onion powder, black pepper, half of the lime juice, and 1 tablespoon of olive oil. Toss to coat evenly.
  • Brown chicken: Heat a large skillet or cast-iron pan over medium-high heat. Add the chicken and quickly brown on all sides, about 2-3 minutes. The chicken does not need to be fully cooked through at this stage. Remove from skillet and set aside.
  • Cook vegetables and finish chicken: In the same skillet, add the remaining tablespoon of olive oil, bell peppers and onion. Cook, stirring frequently, for about 3-4 minutes until the vegetables begin to soften. Return the browned chicken to the skillet and continue cooking everything together for another 2-3 minutes, until the chicken is cooked through and the vegetables are tender-crisp.
  • Finish and serve: Drizzle with remaining lime juice and toss to combine. Garnish with fresh cilantro if desired.
  • Serve hot: Serve immediately with warmed tortillas and your favorite low sodium toppings like avocado slices, sour cream, or fresh salsa.
