Ingredients

  • 2 pounds russet potatoes (or other starchy potatoes)
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 cup milk or unsweetened plant-based milk (start with this, add more if needed)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup plain Greek yogurt (optional)

Instructions

  1. Peel, wash, and cut the potatoes into uniform 1-inch cubes.
  2. Place potatoes in a pot, cover with water, and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until fork-tender.
  3. Drain potatoes well and return them to the pot. Mash until smooth.
  4. Add butter, olive oil, milk, garlic powder, yogurt (if using), and pepper. Mash and add additional milk if needed for desired consistency. 
  5. Taste and adjust seasonings.
